Matcha Chia Pudding & Strawberry Ice Cream PARFAIT


Finally made a parfait again!
What I love the most about them is that you can get all the different textures by layering all the different components in one jar!

My favourite way to layer goes like this: pudding -> ice cream/smoothie -> granola/some kind of crunch! Sometimes I also add some chopped fruits and sauce! *whenimnotlazyHA*

The pudding is made the night before so all you need to do in the morning is blend up some ice cream and layer it on top plus put some crunch on there yas! ;)


For the Matcha Chia Pudding:
  • 1/4 c chia seeds
  • 1 c soy/nut/other plant based milk of choice
  • 1 tsp matcha powder (use more/less to taste)
  • 2 tbsp coconut/brown rice syrup/sweetener of choice
For the Strawberry Ice Cream:
  • 4-5 ripe bananas, frozen
  • handful of strawberries (around 5-6 pretty big ones)
  • 2 tbsp coconut/brown rice syrup/sweetener of choice
  • 1/2 tsp vanilla extract
For the Assembly:
  • big mason jar (or any glass/jar you have)
  • lots of granola/your favourite crunchy cereal


For the Matcha Chia Pudding:
  1. Simply mix everything together in a container and refrigerate overnight! :)
For the Strawberry Ice Cream:
  1. Put everything in a high speed blender/food processor. Pulse & blend until smooth. Scraping the sides every now and then.
To Assemble:
  1. Spoon the chia pudding into the bottom of the jar.
  2. Add the ice cream on top of that. You can also add some chopped strawberries for an extra texture combo!
  3. Sprinkle lots of crunchy cereal on top for that wonderful crunch!

*ps: this recipe makes a regular breakfast/meal-sized portion, you can make less for a snack-sized portion or make more if you're hungry! :p
